Indian cuisine is probably the best in the world. The variety, the tastes it offer’s is second to none, except for salads. Salad in most Indian eateries means onions with lemon and salt. It makes sense given the hot climate we have there. The fancy ones will have onions, tomatoes, and cucumber with lemon, salt and pepper. But who says Indian food cant go with fancy salads..
To make a good salad try this…
Get fresh cream, oregano, Italian herbs, garlic salt… EXTRA virgin olive oil.. mind you the extra is important in the olive oil… Balsamic Vinegar again not your ordinary malt variety… That’s all you will need for the dressing
Mix the cream with dash of olive oil and vinegar add the herbs and salt… Add a bit of water and mix them well into a fine paste. Let it sit for around 20 mins. Really settles the vinegar and olive flavor into the cream.
For the actual salad….. get baby potatoes, cherry tomatoes, salad onions, baby leaf salad pack form the supermarket, Dutch carrots and black olives. Cook the potatoes, cut the tomatoes, onions, carrots and olives into big chunky pieces. You can fine chop them but I like them chunky…
Take all of them together and mix it well with the dressing…. I mean really mix it so that the flavor goes into the vegetables….
Now take a big salad bowl.. add your baby leaves from the salad pack into the bowl… Pour the vegetables soaked in the dressing evenly over it.
Serve it with any type of paneer, rajhma, malai kofta and of course Dal Makhani.. And if someone special is on for dinner try a glass of Shiraz or merlot with it.
